As a member of Relais & Chateaux, which represents the largest network of star chefs in the world, Hambleton Hall’s Michelin star head chef Aaron Patterson is supporting World Ocean Day by inviting his old friend, Alan Gleeson from Cheltenham’s The Lucky Onion’s No 131, to produce some outstanding seafood dishes using sustainable fish.

World Ocean Day, which is taking place on June 8 this year, is a global day of ocean celebration that emphasises the responsibility each of us has to support sustainable fishing.

Alan Gleeson is the perfect partner for Aaron to team up with for World Ocean Day. He worked under Aaron at Hambleton Hall until 2003 when he left to work with Richard Corrigan at Lindsay House, then moved on to The Crab at Chieveley until 2007, before joining The Fish House in West Sussex in 2008. There he began his relationship with Richard and Dan Langford, third-generation lobster fishermen from Selsey. Achieving national recognition there with his lobster and fruits de mer dishes, Alan moved to The Lucky Onion’s No 131, which Tatler cites as “one of the coolest places to eat in England

The World Ocean Day menu on June 8 at Hambleton Hall is £60 for three courses. The menu will comprise mackerel tartare, cucumber, horseradish and tobiko wasabi; butter-poached Selsey lobster with a Vietnamese crab and glass noodle salad, then Hambleton tiramisu.
